Microwave cup cake for two

Easy way to cheer someone up! I’ve put the basic vanilla recipe here but I usually add something - the photo above is my mug-cake with chocolate chips!

You will need:

  • A microwave

  • Large bowl

  • Small bowl

  • Two cups and saucers (don’t use any with gilt edging, as they won’t be microwave safe)

  • Fork

  • Knife

  • Plate

  • Balloon whisk

  • Measuring spoons

  • Kitchen scales

Ingredients:

  • 60g caster sugar

  • 60g self-raising flour

  • 60g unsalted butter

  • 1 medium free range egg

  • 2 tablespoons milk

  • 1 teaspoon vanilla essence

(Optional flavours: 1 tablespoon chocolate chips (per cup), 1 tablespoon cacao nibs etc)

Bake away!

  1. Cut the butter up into small 1cm pieces on a plate.

  2. Break the egg into a small bowl and beat with a fork until bubbly.

  3. Put the butter in a microwaveable small bowl and melt in the microwave (it takes 20 seconds in mine). Stir until it has all melted.

  4. Put the sugar, flour, butter, egg, milk and vanilla essence into a large bowl and beat with a balloon whisk until smooth (takes up to one minute).

  5. Divide the mixture between two cups.

  6. Optional: Add any additional flavourings such as chocolate chips and gently mix them in.

  7. Put one cup on its saucer and microwave until baked (it takes one minute in my microwave but microwaves differ, so watch yours. You can always open the microwave to check to see if it is baked).

  8. Carefully (it will be hot!) remove from the microwave.

  9. Repeat the microwave baking with the second cup.

  10. The hard part - wait until the cakes have cooled down a bit - this can take about 5 minutes.

  11. Enjoy!
